Smoked Jalapeño Popper Deviled Eggs

Smoked Deviled Eggs take the classic party favorite to a whole new level with rich smoky flavor, creamy filling, crispy bacon, and a spicy jalapeño kick. Perfect for BBQs, game days, and backyard gatherings.

12 large eggs
3 tablespoons mayonnaise
3 teaspoons fresh chives, chopped
2 teaspoons brown mustard
1 teaspoon BBQ rub, plus more for garnish
1 teaspoon apple cider vinegar
1–2 teaspoons hot sauce
2 tablespoons pickled jalapeños, finely chopped
3 tablespoons crumbled bacon
12 fresh jalapeño slices
Fine sea salt, to taste
Freshly ground black pepper, to taste
Directions
- Smoke the eggs
Preheat your smoker to 325°F. Place the eggs directly on the grill grates and smoke for 30 minutes. - Cool the eggs
Transfer the eggs to a bowl of ice water for 10–15 minutes to stop the cooking process and cool completely. - Peel and cold smoke
Carefully peel the eggs. Lower the smoker temperature to 180°F and return the peeled eggs to the smoker for another 30 minutes for extra smoky flavor. - Prepare the filling
Slice the eggs in half lengthwise and remove the yolks. Place yolks in a bowl and mash with:
– mayonnaise
– mustard
– BBQ rub
– apple cider vinegar
– hot sauce
– chopped pickled jalapeños
Mix until smooth and creamy. Season with salt and pepper to taste. - Season the egg whites
Spread a little BBQ rub onto a plate. Press the cut side of each egg white lightly into the seasoning. - Fill and garnish
Transfer the yolk mixture to a piping bag (or zip-top bag with the corner cut off). Pipe filling into each egg white. You can also spoon the yolk mixture into the egg white. Use 1 teaspoon per egg white.
Top with:
– crumbled bacon
– fresh jalapeño slices
– chopped chives
Notes
- For milder heat, remove the seeds from the fresh jalapeño slices.
– Thick-cut pepper bacon adds the best texture.
– These can be made several hours ahead and chilled before serving.
– A fruitwood like apple or cherry works especially well for smoking the eggs.
